Join us to celebrate #NationalSoupMonth! On Sunday at 5 p.m., Chef Will Rufe from NCC’s Hampton Winds Restaurant will host a Zoom gathering at which he’ll demo how to make Tomato & Vegetable Soup with Rice — vegetarian, gluten-free and family-friendly!
You can cook along with him, or just watch and enjoy as he shows us how.
If you want to prepare this delicious soup, here’s what you’ll need:
Tomato and Vegetable Soup with Rice
- 1 stick butter (can be substituted with oils)
- 3 cloves garlic
- 1 Spanish onion
- 2 stalks celery
- 1 carrot
- 1 zucchini
- 1 russet potato
- 1 can black beans (drained and rinsed)
- 1 can (12-15 oz) crushed tomatoes
- 1 cup white wine (optional)
- 3 quarts vegetable stock/broth
- 2 cups cooked rice
- 4 sprigs fresh thyme
- ¼ cup fresh parsley
- salt and pepper to taste
This will make just under a gallon of satisfying soup, so get ready to enjoy with family and friends.
